How to Cook the Best Beef Rendang Indonesian Food

Rendang is a delicious Indonesian dish that can be a bit tricky to make. Here is a recipe for cooking the best beef rendang dish:

Ingredients:

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 cans (14 oz each) coconut milk
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 4 Indonesian bay leaves
  • 4 cloves garlic, minced
  • 4 shallots, chopped
  • 3 red chilies, sliced
  • 1 teaspoon ginger powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 tablespoons vegetable oil

Instructions:

  1. In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the garlic, shallots, and chilies, and cook until fragrant, about 2 minutes.
  2. Add the beef to the pot and cook until browned on all sides.
  3. Add the lemongrass, kaffir lime leaves, bay leaves, ginger powder, turmeric powder, coriander powder, cumin powder, salt, and sugar to the pot, and stir to combine.
  4. Add the coconut milk to the pot and bring to a boil. Reduce the heat to low and simmer, uncovered, for 3-4 hours, stirring occasionally, until the beef is tender and the sauce has thickened.
  5. Continue to cook the rendang, stirring frequently, until the sauce has thickened and darkened in color. This can take an additional 30 minutes to an hour.
  6. Serve the rendang hot with steamed rice.

Tips:

  • Use a good quality coconut milk for the best flavor and texture.
  • Bruising the lemongrass stalks helps to release their flavor into the sauce.
  • Be patient when cooking the rendang – the longer you cook it, the more tender and flavorful the beef will be.
