Ingredients:
- 2 pounds beef chuck, cut into 1-inch cubes
- 2 cans (14 oz each) coconut milk
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 4 Indonesian bay leaves
- 4 cloves garlic, minced
- 4 shallots, chopped
- 3 red chilies, sliced
- 1 teaspoon ginger powder
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon salt
- 1 teaspoon sugar
- 2 tablespoons vegetable oil
Instructions:
- In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the garlic, shallots, and chilies, and cook until fragrant, about 2 minutes.
- Add the beef to the pot and cook until browned on all sides.
- Add the lemongrass, kaffir lime leaves, bay leaves, ginger powder, turmeric powder, coriander powder, cumin powder, salt, and sugar to the pot, and stir to combine.
